Here is one of our favorite dishes from 2017. This was one of our most influential and important dishes we created. It is only three components; roasted beef ribeye, potato butter, and a nice and acidic béarnaise sauce. This has been used as a reference point of where we want to take our 1865 Wine Cellar. As it only had three ingredients, each one had to be prepared with respect and technique to enable it to all come together to deliciousness. Throughout 2018 we have used this to continuously remind ourselves that it is not always in the cook as to what is important, it has to do with the integrity of the ingredients and the cooks willingness to respect it.
